MANCHEGO CHEESE (0.375 kg)

Manchego is a name‑protected cheese which may only be made in Spain's central La Mancha region‑and only from the milk of Manchega sheep. This Don Juan Manchego contains raw milk and ages for a minimum of one year. Its extra character is partially due to the milk and maturation, but also to the care the cheesemakers take during the handling. It is truly a small‑scale artisan product; it is hand‑formed, hand‑wrapped, and dry cured for a year under close inspection. Its robust flavor reflects the rugged Spanish countryside‑floral, nutty, sweet, and savory all at once.

Don’t be fooled by imposters! Real Manchego cheese is made only with milk from Manchega sheep in the “La Mancha” region of Spain. It must pass inspection and be certified by the Consejo Regulador and receive a certification stamp like the one on Don Juan Manchego Cheese. The hand‑pressed cheese is aged for a minimum of two months and has a distinct bouquet and aroma. With its intense flavor a slight piquancy, Manchego should have a place on every cheese plate. It’s also delightful on it’s own or paired with fruits and nuts.

 

VALDEON CHEESE  (0.3125 kg)

Produced with a blend of cow´s and goat´s milks, Valdeon is sought after because it is milder than PDO Cabrales and is characteristically wrapped in maple leaves for an appealing presentation. It has an excellent balance of sweet and tangy with an earthy finish.

MAHON (0.350 kg)

When young, Queso Mahon is sweet and a little spongy;  "Mahon Reserva", a name given to it once it's been aged over a year. This is a bold cheese, no doubt about it. Highly sharp, salty and Parmesan-like in texture. Subtleties are not lost on Mahon Reserva, though. Digging deeper, there are cheddar-like caramel and mild smokey flavors. This is also a cheese to go crazy with and eat the rind as well. Rubbed in oil and paprika during aging, the rind has a wonderful flavor, like a fruity olive oil.

PAÑOLETA (0.375 gr)

Aged for about 60 days, this pasteurized goat's milk cheese is formed using a servilleta or napkin, which gives it its unique shape. The compact, semi-soft paste is bone-white, and offers flavors that are sweet, buttery and mildly tangy.

QUINCE PASTE (MEMBRILLO) ( 150 gr)

Membrillo is Spanish for quince and preserves made from quince are also often given the same name. Quince paste has been a traditional Spanish delicacy for centuries, often eaten as after meal treats with delicious Spanish cheeses like Manchego, Mahon and Valdeon. 

The quince is naturally high in pectin and therefore can be made into a rather thick paste with little to no artificial additives. The sweet, slightly tart taste is nicely complimented by the mild, salty and creamy flavour of cheeses. Pair with almost any that you choose, commonly though you will find it on a cheese board, quince paste can also be used in the baking of bread and pastries.
